JW Marriott Kolkata introduces new menu at Vintage Asia

Renowned Pan-Asian fine-dining restaurant, Vintage Asia, at JW Marriott Kolkata, has decided to take a look at a wide range of popular dishes from Japan, for its new menu, curated by head chef – Asian chef Tej – B. Sarou .

Nepal-born chef Tej-B. Saru, who recently joined as the Oriental Specialties Chef of Vintage Asia, has more than two decades of experience and believes that the palette of Indian dishes is becoming more and more experimental with the weather. So it’s time to move beyond sushi rolls and tempura, or sashimi, when it comes to Japanese cuisine. Miso soup, yakitori, edamame, ramen, and udon are just a few examples that will appear in various menu avatars.


Yakitori is a dish of grilled chicken bites on a skewer. He uses every part of the chicken, including the heart, liver and even the chicken comb to avoid waste, an important part of Japanese food culture, the chef explained. Unlike other traditional Japanese dishes, yakitori has been eaten since the mid-17th century, as eating meat was largely taboo in Japan for a time.

Another Japanese dish the chef talked a lot about was black miso (soybean paste and sesame seeds). Miso ramen soup is flavored with soybean paste (miso), resulting in a thick, brown soup with a rich, complex flavor. The style originated in Hokkaido where the long cold winters spurred the need for a heartier type of ramen soup, but it has spread to the point where it can be found just about anywhere in Japan.

Vintage Asia’s new menu includes over 20 dim sum variations like Edamame & Truffle, Truffle & Gold – Mushroom Nest, Siu Mai Chicken and Mostly Shiitake, Xiao Long Bao – Pork Tea, Siu Mai Chicken and Mostly Shiitake, Lamb in Spicy Kefir Lime and Fresh Edamame, noodles and ramens such as ‘Sesame Soba Noodle’, ‘YakiUdon Noodle’ and ‘Spicy Black Miso Ramen’.

“The revamped Asian menu will offer a blend of progressive Asian selections, Asian-infused craft cocktails and contemporary desserts,” said Tej-B Chef Saru. “We will emphasize interactive presentations and selection of fresh ingredients handpicked from local and international markets and elegantly presented to retain and prolong the unique flavors of Asian classics.” The menu includes a range of flavor profiles found in Asia from wok to soups, grilled meats, starters, main course and desserts.

Customers have the option of pairing their food with a range of Asian-inspired concoctions such as Asiatic Mary, Chilly Melon Plumtini, Tex Mex Chilly Margarita, Tokyo No 6, TukTuk Bangkok Mojito, The Last Mai Tai, and more.
